Thanks for the report and the working config, @bigwave! That made this one quick to add.

The board is now in ESP Screens as an experimental board: update ESP Screen Manager to 0.4.28 and pick Sunton · 7 inch (ESP32-8048S070) in New screen. You no longer need your own packages: list: the board file brings the display, the GT911, the backlight and the right grid (4 x 4 lying down, 2 x 7 standing up).

Both things you saw came from the hand-written YAML, not from the board:

Taps ignored: TOUCH_SWAP_XY: "true" and TOUCH_MIRROR_Y: "true" in your substitutions swapped the touch axes, so a finger landed on a different place than where you let go. Your board reports touch the right way round without them.
Not all tiles shown: packages/cells/6.yaml gives a screen six cards, but a 4 x 4 grid has sixteen cells. The board file includes cells/16.yaml.

The build and the renders pass here, but I don't have this board, so nothing has been seen on real glass yet. Could you install it through New screen (or reflash your existing screen with the new profile) and tell me:

Colours correct and the picture stable across page changes and a cold start.
Taps near all four corners, a slider drag and a swipe from the left and right edge to change pages.
Brightness across its range, standby after the timeout and waking it by touch, a few times in a row.
The Heap Free sensor (under Diagnostic) with a full page of tiles.
Optional: the same once standing up (Rotation in the screen's settings).

docs/SUNTON8048S070.md has the details. Once it checks out I'll mark the board as working.
