add a (lock|cleaning|read only) mode to panel disabling touch

Sometimes we want to disable the panel but on some installations removing energy is not the best option, also it can help to be a show only panel

use cases

• during panel cleaning disabling touch can be helpful (this can be set on panel with a timer)
• allowing a read only mode for some times during events with visitors

This can be controlled by one or more entities on the panel that can be controlled from home assistant

• switch to enable/disable mode
• a timestamp to indicate when it should go back to normal mode

if someonse tries to use this as safety then the state should be persisted if power is removed
